what kind of sauce did you serve with them?

Almost a ghost.

I served it with:

* veganaise: the common mayonnaise, but instead of egg or cow milk, it's made with soy milk. I always make my own veganaise :)
* tomato sauce: fried tomatoes with cinnamon, parsley, oregano, garlic and onion... delicious!

but you can use also other soft sauces
I had no time for presentation, but you can serve it on lettuce leaves, with some olives :)

I shouldn't look at these when i'm hungry. :)

I'm afraid i'm ignorant enough to not to even know how croquettes are made as usual. It would be great if you good also write the recipes here (or links to them).

Well, it's very simple, you only have to do a bechamel with the ingredients you like and a bit more of wheat flour. Leave it repose about 1 hour or until cold (at the fridge for example) and make cilinders with the paste. then pass each cilinder first on chickpea flour+water (egg-replacer) and then on bread powder and fry them with oil.
If you make the bechamel on a big frying pan you can make about 30 croquettes (each croquette is about 6 cm). If you are not going to eat them all, freeze them :)

Thank you, i'll try it soon. :) Although no chick pea flour in my litle town, i suppose, but i'll find out some alternative...
:iconvegancuisine:
try with any other egg-replacer, but if there's no alternative, use wheat or corn flour with water :)
